Classes in Pickling or Cheesemaking (at additional cost and only offered based on sufficient interest)

Pickling 101/Lacto Fermentation

At Isabella Freedman, we make organic kosher lacto-fermented products, including pickles and sauerkraut. Learn about the magic of fermentation as you follow the steps from cucumber to pickle. Participants will learn about harvesting, preserving and fermenting seasonal vegetables. We need a minimum of 10 people to take this class for it to be offered.

Cheesemaking

Learn  various cheesemaking techniques and principles. See how various soft cheeses are made, especially those created from goat milk from Adamah’s own goat herd!

Day Hike Option - This will be a 6 to 8 mile hike, partially along the Appalachian Trail. It will be a solid moderate hike, a 6 on a scale of 1 to 10. Experienced hikers only! We may make it as far as Rands View...

Onsite Hike Option - this will go to the scenic overlook nearby, on Isabella’s property. Its about a 45 minute in an out hike, with one 10 minute portion up a hill that is moderate, but the hike is easy for most, including children as young as 5—7 years old.

Biking -  we will have 3 possible options, all leaving from Isabella Freedman, at additional cost.

 A) Waterfalls Option—Bike to Great Falls, in nearby Falls Village. Easy biking, 3 miles each way, for a total of 6 miles, with some elevation and hills but not too much for most folks. There is also a driving option for families to visit the falls in the afternoon.

B) River  + Covered Bridge Option - Bike Along the Housatonic River, which is very scenic. At the midpoint you have a beautiful 150 year old beautiful covered bridge. that you will visit in West Cornwall, CT. The ride is 6 miles each way to the bridge, for 12 miles total and takes about 2 hours from start to finish.  . A moderate bike ride with some hills, especially Johnson Rd on the way back…

C) All Day Option - if there is enough interest, we will also have an All day option, a solid 4 hr biking option in the area which is very scenic, goes along the Housatonic River as in option B, but comes back a longer way, so that it’s a 20 mile loop. This is for serious bikers only, and has some hills to negotiate. This will take about 4 hrs total.

Boating and Swimming at Isabella Freedman

Boat on Isabella’s picturesque lake ( above), and swim in their outdoor pool (weather permitting)

Hiking onsite on a scenic trail

Take an excellent, moderate 2 hr hike on Isabella Freedman property, to some scenic overlooks. The hike is moderate and is about 3 to 4 miles in length.

Helping out on the Farm (based on interest)

Deepen your understanding of our food system and put your ecological values into action as you spend a few hours lending a hand on our organic vegetable farm. Jewish tradition teaches us that we must work to repair the world: learn how we do this on our farm by using ecologically-restorative farming methods and cultivating a sense of awe and gratitude toward the natural world. No prior farm experience necessary. Ensure that you have a hat and good shoes for working, plus clothes that can get dirty!

Relaxing at Isabella Freedman

You can just choose to relax and enjoy the amenities at Isabella, such as:

Sit on the porch overlooking the lake, or take a nature walk around the lake to visit the goats. Play volleyball, tennis or other sports, based on interest. Or just hang out on the grounds and soak up the relaxing and restorative environment at Isabella Freedman!
